A good cup of South Indian filter coffee should feel bold, thick, and rich when mixed with hot milk. You do not need any fancy machines to make it. You just need a simple metal filter and a few easy steps.
1. Choose the Right Coffee Blend
Real strength starts with good coffee powder. Look for a mix of strong coffee beans and a little bit of roasted chicory. Chicory is a plant root that gives the coffee a rich, dark color and a thick, smooth feel so it never tastes watery in milk.
2. Spoon in Enough Coffee Powder
To make your coffee strong, do not be shy with the powder.
Add three to four big spoonfuls of fresh coffee powder into the top cup of your metal filter. Shake it very gently so the powder sits flat and smooth like sand at the beach.
3. Place the Pressing Disc Gently
Take the little metal disc with the handle and place it softly on top of the powder.
Important tip: Do not push down hard. This is not an espresso maker. If you press it down tightly, the tiny holes at the bottom get blocked, and the water cannot drip through. Just let the disc sit on top on its own.
4. Pour Hot Water
Boil some fresh water on the stove. Once it starts bubbling, turn off the fire and count to forty. This cools the water just a tiny bit so it does not burn the coffee.
Pour the hot water slowly over the metal disc until the top cup is nearly full, then close the lid tightly to keep all the lovely steam and smell inside.
5. Wait for the Slow Drip
Leave the filter alone on your kitchen counter for about fifteen minutes.
Hot water will slowly pass through the powder and drip down into the bottom cup. The liquid collected at the bottom is thick, dark, and strong. Use this first fresh drip for the best taste. Do not run more water through the used powder again.
6. Mix with Hot Milk and Pull
Now it is time to make your cup:
-
Boil fresh, whole milk in a small pan until it rises to the top.
-
Pour a small splash of your dark coffee liquid into a glass or tumbler.
-
Add a spoon of sugar if you like it sweet.
-
Fill the rest of the cup with your boiling hot milk.
-
Pour the coffee back and forth between your tumbler and the small wide bowl from a little height.
This mixes the sugar, cools the drink to the perfect warmth, and creates that fluffy layer of foam on top.
